Jalapeno Cheese Cornbread
A slightly spicy cornbread with lots of cheddar cheese, easily made from a package mix. Great served with Butterball Smoked Sausage.

Ingredients
- 2 tablespoons vegetable oil
- 2 packages (8-1/2 ounces each) corn muffin mix
- 2 cups (8 ounces) shredded Cheddar cheese
- 1 jalapeno pepper, finely chopped
- 2 eggs
- 1 cup buttermilk

Preheat oven to 375°
Coat 10-inch cast iron skillet with vegetable oil. Heat skillet in oven while preparing cornbread.
Combine remaining ingredients in medium size mixing bowl. Stir until all ingredients are just moistened. Pour batter into hot skillet.
Bake 25 to 30 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack 15 to 20 minutes. Serve warm.
