Rita’s Famous Roasty-Toasty Potatoes

Ingredients

  • 3/4 pound salt pork
  • 5 pounds red potatoes, scrubbed
  • 6 cloves garlic, minced
  • 1/4 cup chopped fresh parsley
  • jar paprika, to taste

  1. Preheat oven to 375°F.

  2. Arrange salt pork in single layer in large roasting pan and place in oven for 30 minutes or until fat is rendered and salt pork is crisp. Add potatoes, garlic and parsley and toss until well coated. Generously sprinkle with paprika and pepper and thoroughly mix until all potatoes are coated.

  3. Bake 1-1/2 to 2 hours or until potatoes are crisp and browned, stirring once.

  4. Spoon into serving bowl discarding salt pork pieces. Serve immediately.
