Spicy Sausage Tortilla Soup

Ingredients

  • 1/2 cup vegetable oil
  • 4 small corn tortillas, cut into strips
  • 1 small zucchini, cut into 2-inch strips
  • 1 medium peeled carrot, cut into 2-inch strips
  • 1 rib celery, cut into 2-inch strips
  • 2 cans (14.5 ounces each) chicken broth
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon ground red pepper
  • 1 package (14 ounces) Butterball® Smoked Turkey Dinner Sausage , thinly sliced

Serving Suggestions
  1. Place oil in small saucepan. Heat over medium high heat until hot. Fry tortilla strips, one handful at a time until crisp and lightly brown. Drain on paper towels.

  2. Combine broth, cumin and pepper in a 3-quart saucepan. Bring to a boil. Add vegetable strips and sausage pieces. Reduce heat and simmer 5 minutes until sausage is heated through and vegetables are tender.

  3. To serve, ladle soup into bowls. Top with fried tortilla strips.
