Ingredients
- 2 tablespoons olive oil
- 1 cup diced carrots
- 3 cloves garlic, minced
- 1 1/2 cups frozen green peas, thawed
- 1 cup finely chopped onion
- 1/2 cup dried cranberries
- 4 cups chicken broth
- 3/4 cup dry couscous

Heat oil in a large saucepan on medium-high. Cook and stir carrots and garlic 5 to 6 minutes or until softened. Stir in peas, onions and cranberries; cook 2 minutes.
Stir in broth. Bring to a boil; remove from heat. Stir in couscous. Cover pan; let stand 10 minutes. Fluff mixture with a fork and serve.
