Spicy Sausage Jambalaya
Traditional jambalaya made with Butterball Turkey Sausage. Serve with a green salad for a great meal!

Ingredients
- 1 1/2 tablespoons vegetable oil
- 2 pounds Butterball® Smoked Turkey Dinner Sausage , diagonally cut into 2" x 1-1/4" strips
- 2 cups diced onions
- 1 1/2 cups diced green peppers
- 1 cup diced celery
- 6 cloves garlic, minced
- 1 1/2 cups uncooked long grain white rice
- 1 teaspoon ground dried thyme
- 1/4 teaspoon cayenne pepper
- 2 cups chicken broth
- 1 can (14.5 ounces) diced tomatoes or low sodium diced tomatoes, undrained
- Thinly sliced green onions, optional

Heat oil in 4-quart Dutch oven or large heavy saucepan on medium heat. Cook and stir sausage pieces, onions, green pepper, celery and garlic 3 to 4 minutes or until lightly browned.
Stir in rice, thyme and cayenne. Cook and stir until rice is thoroughly coated with ingredients. Stir in broth and tomatoes. Bring to boiling; reduce heat. Simmer, covered, 15 minutes. Stir, scraping bottom of pan, to avoid rice from burning. Cook, covered, an additional 10 minutes.
Spoon jambalaya onto serving platter. Garnish with sliced green onions, if desired.
