Sweet Potato, Cheddar and Cider Gratin
Smoked Cheddar cheese adds a new flavor note to sweet potatoes in this baked side dish that will enhance any meal.

Ingredients
- 1/4 cup olive oil, divided
- 2 large onions, peeled and thinly sliced
- 2 1/2 pounds sweet potatoes, peeled and thinly sliced
- 2 cups (8 ounces) shredded smoked Cheddar cheese, divided
- Ground nutmeg, optional
- 1 1/2 cups apple cider

Preheat the oven to 375°F.
Brush 1 tablespoon of the oil over the bottom and sides of a 13×9-inch glass baking dish. Set aside.
Heat the remaining 3 tablespoons oil in a large skillet on medium-high heat. Cook and stir onions 13 to 15 minutes or until soft.
Alternate layers of onion, sweet potatoes and 1-1/3 cups of the cheese in prepared baking dish. Sprinkle each layer lightly with nutmeg. Pour cider over mixture. Cover pan with foil.
Bake 50 minutes to 1 hour or until the potatoes are almost tender. Remove foil; continue baking 15 minutes. Sprinkle the remaining cheese evenly over top. Bake 15 minutes or until cheese has melted.
