Dried Fruit and Tomato Chutney

Tomatoes with dried fruit, onion, cilantro and balsamic vinegar

Ingredients

  • 2 tablespoons margarine or butter
  • 1 medium (about 1/2 cup) onion, chopped
  • 1/2 cup chopped dried apricots
  • 1/2 cup sweetened dried cranberries
  • 1/2 cup golden raisins
  • 1 can (14.5 ounces) petite diced tomatoes, undrained
  • 1/4 cup water
  • 1 teaspoon granulated sugar
  • 2 tablespoons finely chopped fresh cilantro
  • 1 tablespoon white balsamic vinegar
Directions

  1. Melt margarine in medium saucepan on medium heat. Add onion, apricots, cranberries and raisins. Cook and stir 5 minutes, or until onion is tender.

  2. Stir in tomatoes with juice, water, sugar and salt.

  3. Bring to a boil on medium-high heat. Reduce heat to low. Cook and stir 10 minutes.

  4. Remove from heat; place in bowl. Add cilantro and vinegar; mix until blended. Cool slightly. Cover. Refrigerate at least 30 minutes before serving to allow flavors to blend.
