BBQ Deep Fried Turkey

Spicy and sweet BBQ sauce is injected into the whole turkey before deep frying.

Ingredients
- 1/2 cup honey
- 6 tablespoons melted butter
- 6 tablespoons barbecue sauce
- 1/4 cup cider vinegar
- 2 teaspoons hot pepper sauce, or to taste
- 3 gallons peanut oil, for frying
- 1 (10 to 12 pound) Butterball® Whole Turkey, thawed if frozen

Combine honey, butter, BBQ sauce, cider vinegar and hot pepper sauce in a small saucepan. Cook on medium heat until all ingredients are dissolved and well blended. Let cool to room temperature.
Meanwhile, preheat oil to 400°F.
Remove giblets and neck from turkey. Pat dry with paper towels. (Do not use the string lifter that comes with your turkey.)
Inject 1/2 cup mixture into each side of breast. Inject 1/4 cup mixture into each leg/thigh area.
Place turkey, breast side up, in basket. Slowly lower basket into hot oil, being cautious of splattering oil. Maintain oil temperature at about 350°F. Fry turkey for 3-1/2 to 4 minutes per pound. Remove from oil to check doneness. Insert an instant-read thermometer into thickest part of breast, not touching bone. Temperature should read 170°F. Insert thermometer into thickest part of thigh, not touching bone. Temperature should be 180°F.
Remove from hot oil and drain on paper towels. Let stand for 15 minutes before carving.
