Place each turkey burger between 2 pieces of waxed paper. Press to 3/8-inch thickness. Place 1 oz. of the Blue cheese crumbles 1/2-inch from the edge on half of the patty. Fold patty over cheese. Seal edges together. Refrigerate at least 1 hour.
For Onion Gravy, melt butter in medium skillet on medium-high heat. Add onions. Cook 15 minutes, stirring occasionally, until golden brown. Stir in gravy. Heat to simmer.
Meanwhile, spray a large skillet with cooking spray. Heat on medium heat. Add cheese-stuffed turkey burgers. Cook 8 to 10 minutes, turning half way through cooking time until burgers reach an internal temperature of 165°F.
Place burgers on serving platter. Top with Onion Gravy.
