Broccoli with Onion-Jack Sauce

Ingredients
- 2 tablespoons butter
- 2 cups chopped onion
- 2 tablespoons all-purpose flour
- 1 1/2 cups low-fat or whole milk
- 1 cup (4 ounces) shredded Monterey Jack cheese
- 3 pounds fresh broccoli, coarsely chopped

Cook and stir onion in butter in medium saucepan on medium heat 6 to 8 minutes or until tender.
Stir in flour until smooth. Gradually stir in milk. Bring to boil, stirring frequently. Cook and stir 1 minute. Reduce heat to medium-low. Stir in cheese until melted.
Meanwhile, steam broccoli in water until crisp-tender. Drain well. Place broccoli in shallow serving dish and top with onion sauce.
