Creole Rice
Cooked rice flavored with celery, onions and peppers pairs well with Butterball Smoked Sausage.

Ingredients
- 3 tablespoons olive oil
- 1/2 cup finely chopped celery
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped red bell peppers
- 1 tablespoon minced garlic
- 1/2 cup chicken broth
- 4 cups cooked long grain white rice
- 1/2 cup chopped parsley
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper

Heat olive oil in large skillet on medium-high heat. Add celery, onion, peppers and garlic. Cook and stir 3 to 5 minutes or until vegetables are tender-crisp.
Stir in chicken broth; bring to boiling. Reduce heat; simmer 10 minutes or until the liquid is reduced by half.
Stir in rice, parsley, salt and pepper.
