Dried Fruit and Tomato Chutney
Tomatoes with dried fruit, onion, cilantro and balsamic vinegar

Ingredients
- 2 tablespoons margarine or butter
- 1 medium (about 1/2 cup) onion, chopped
- 1/2 cup chopped dried apricots
- 1/2 cup sweetened dried cranberries
- 1/2 cup golden raisins
- 1 can (14.5 ounces) petite diced tomatoes, undrained
- 1/4 cup water
- 1 teaspoon granulated sugar
- 2 tablespoons finely chopped fresh cilantro
- 1 tablespoon white balsamic vinegar

Melt margarine in medium saucepan on medium heat. Add onion, apricots, cranberries and raisins. Cook and stir 5 minutes, or until onion is tender.
Stir in tomatoes with juice, water, sugar and salt.
Bring to a boil on medium-high heat. Reduce heat to low. Cook and stir 10 minutes.
Remove from heat; place in bowl. Add cilantro and vinegar; mix until blended. Cool slightly. Cover. Refrigerate at least 30 minutes before serving to allow flavors to blend.
