Ingredients

  • 2 tablespoons olive oil
  • 1 cup diced carrots
  • 3 cloves garlic, minced
  • 1 1/2 cups frozen green peas, thawed
  • 1 cup finely chopped onion
  • 1/2 cup dried cranberries
  • 4 cups chicken broth
  • 3/4 cup dry couscous

Serving Suggestions
  1. Heat oil in a large saucepan on medium-high. Cook and stir carrots and garlic 5 to 6 minutes or until softened. Stir in peas, onions and cranberries; cook 2 minutes.

  2. Stir in broth. Bring to a boil; remove from heat. Stir in couscous. Cover pan; let stand 10 minutes. Fluff mixture with a fork and serve.
