Ingredients
- 2 teaspoons olive oil
- 1 package (14 ounces) Butterball® Smoked Turkey Dinner Sausage , cut into 1-inch pieces
- 1 cup chopped onion
- 1 cup finely chopped red bell pepper
- 3 cloves garlic, minced
- 1 can (14-ounces) diced tomatoes, drained
- 1 can (15-ounces) black beans, rinsed and drained
- 2 teaspoons chili powder
- 2 cups hot cooked rice
- hot pepper sauce, optional

Heat oil in a large skillet or Dutch oven on medium-high heat. Cook and stir sausage 5 minutes or until browned. Add onion, red pepper and garlic. Cook and stir 6 to 7 minutes or until onions are tender. Stir in tomatoes, beans, chili powder.
Reduce heat; simmer, covered, 10 minutes. Serve over hot cooked rice. Drizzle with hot sauce.
