Spicy Sausage Tortilla Soup
Easy to prepare soup combining zucchini, carrots and onion with smoked turkey sausage.

Ingredients
- 1/2 cup vegetable oil
- 4 small corn tortillas, cut into strips
- 1 small zucchini, cut into 2-inch strips
- 1 medium peeled carrot, cut into 2-inch strips
- 1 rib celery, cut into 2-inch strips
- 2 cans (14.5 ounces each) chicken broth
- 1/4 teaspoon ground cumin
- 1/4 teaspoon ground red pepper
- 1 package (14 ounces) Butterball® Smoked Turkey Dinner Sausage , thinly sliced

Place oil in small saucepan. Heat over medium high heat until hot. Fry tortilla strips, one handful at a time until crisp and lightly brown. Drain on paper towels.
Combine broth, cumin and pepper in a 3-quart saucepan. Bring to a boil. Add vegetable strips and sausage pieces. Reduce heat and simmer 5 minutes until sausage is heated through and vegetables are tender.
To serve, ladle soup into bowls. Top with fried tortilla strips.
