Turkey Bacon and Hash Brown Bake

Ingredients

  • 1/2 package (12 ounces) Butterball® Turkey Bacon , cut into 1/2-inch pieces
  • 1/4 cup vegetable oil
  • 4 cups Ore-Ida® Country Style Hash Browns
  • 1 package (10 ounces) chopped frozen broccoli, thawed
  • 1 cup chopped onion
  • 1 cup chopped red bell pepper
  • 8 large eggs
  • 1 cup fat-free evaporated milk
  • 1/2 teaspoon salt
  • 1 1/2 cups shredded sharp Cheddar cheese

Serving Suggestions
  1. Preheat oven to 350°F. Spray 13×9 baking dish with nonstick cooking spray.

  2. Cook bacon in large skillet on medium heat 4 to 6 minutes, stirring occasionally.

  3. Meanwhile, heat oil in another large skillet on medium-high heat. Cook hash browns 2 minutes, turn over and cook for an additional 2 minutes. Add vegetables; cook 3 to 4 minutes. Transfer to baking dish.

  4. Whisk eggs, milk and salt in bowl until combined. Stir in cheese and cooked bacon. Pour over potato mixture.

  5. Bake, uncovered, 40 to 45 minutes or until eggs are set.
