Turkey Enchiladas with Green Chili Salsa

Butterball

Flour tortillas filled with turkey, refried beans, enchilada sauce and cheese, rolled, and topped with additional sauce and cheese, then heated.

Ingredients

  • No-stick cooking spray
  • 1 pound Butterball® Fresh Turkey Breast Strips
  • 8 (8 inch) flour tortillas
  • 16 ounces regular or fat-free refried beans
  • 1 1/2 cups enchilada sauce
  • 2 cups (8 ounces) shredded Mexican-style cheese
  • 1 cup taco sauce or salsa verde (green chili sauce)
  • 1 cup sour cream
  • 2 tablespoons chopped fresh cilantro

Serving Suggestions
  1. Preheat oven 350 degrees F.

  2. Coat skillet with cooking spray. Heat large nonstick skillet on high heat. Cook turkey strips 5 minutes or until no longer pink in center.

  3. Spread a rounded tablespoon of the refried beans on each tortilla. Place equal amounts of the cooked turkey strips, 1 tablespoon enchilada sauce and 2 tablespoons cheese on top of each tortilla. Roll and place in ovenproof or microwaveable dish coated with cooking spray. Top with remaining enchilada sauce and cheese.

  4. Bake 20 minutes or cook in microwave on HIGH for 5 minutes.

  5. Serve tortillas with green chili salsa, sour cream, and cilantro.
