Turkey Mignons with Caramelized Onions
Caramelized onions are easy to prepare and add a gourmet touch to Butterball Turkey Mignons.

Ingredients
- 2 tablespoons vegetable oil
- 2 large yellow onions, sliced 1/4-inch thick
- 1/2 cup white balsamic vinegar
- 1/3 cup chicken broth
- 1 tablespoon honey
- 4 Butterball® Turkey Mignons
- Chopped fresh chives, for garnish

Heat oil in a large skillet on medium-high heat. Add onions. Cook and stir about 15 minutes or until onions are golden brown. Salt & pepper to taste, if desired.
Add white balsamic vinegar, chicken broth and honey. Bring to a simmer and simmer for 4 to 5 minutes.
Meanwhile, cook turkey mignons in a separate skillet according to package directions, until timer pops.
Add turkey mignons to the carmelized onions and bring to a simmer to heat through.
Serve each mignon topped with some of the onion mixture. Garnish with chives, if desired.
