Ingredients
4 cups all-purpose flour
4-½ teaspoons baking powder
2 teaspoons kosher salt
½ teaspoon baking soda
1 tablespoon sugar
8 ounces Cheddar cheese, shredded
⅓ cup Parmesan cheese
3 ounces Gruyère cheese, shredded
8 ounces butter, frozen, then shredded
2 cups cold buttermilk
Melted butter (optional)
Directions
- 1.Combine all dry ingredients in large stainless steel bowl; blend well.
- 2.Combine cheeses in small bowl and add to blended dry ingredients; mix well.
- 3.Work shredded cold butter into cheese and dry ingredient mixture. Do not overprocess.
- 4.Make well in center of ingredients; add buttermilk. Blend to form dough. Do not overprocess.
- 5.Cover dough; rest in refrigerator 20 minutes.
- 6.Scoop dough onto sheet pan. Bake at 375°F (convection oven) or 400°F (conventional oven) 13 to 16 minutes or until golden brown.
- 7.Brush golden biscuits with additional melted butter, if desired. Serve biscuits hot.
