Ingredients
TACO TURKEY
1 tablespoon canola or vegetable oil
1 pound BUTTERBALL® Fresh Ground Turkey
2 teaspoons chili powder
1 teaspoon kosher salt
1 teaspoon paprika
1 teaspoon ground cumin
½ teaspoon garlic powder
½ teaspoon dried oregano
1 tablespoon apple cider vinegar
PINEAPPLE SALSA
½ fresh pineapple, finely chopped
½ small red onion, minced
½ poblano pepper, minced
½ red bell pepper, minced
1 habanero pepper, seeded and very finely minced (optional)
Juice of 1 lime
1-½ teaspoons packed light brown sugar
¼ cup fresh cilantro leaves, chopped
Pinch kosher salt
12 (6-inch) small flour or corn tortillas
2 avocados, sliced
Queso fresco, crumbled
Chopped fresh cilantro
Lime wedges
Directions
- 1.Prepare TACO TURKEY. Heat oil in large nonstick skillet over medium-high heat. Add ground turkey, spices and vinegar. Cook and stir until turkey is browned and cooked through.
- 2.Prepare PINEAPPLE SALSA. Combine all ingredients in medium bowl. Allow flavors to blend 30 minutes (although an hour or two is optimal). You can also make the salsa several hours ahead of time (up to 1 day ahead), covering and storing in the refrigerator.
- 3.Before serving, stir salsa to redistribute juices that have pooled at bottom of bowl.
- 4.Warm tortillas. Top with TACO TURKEY, PINEAPPLE SALSA, avocado slices, queso fresco, chopped cilantro and a squeeze of lime juice.
