Karen's Bourbon Candied Sweet Potatoes

3 pounds sweet potatoes
¾ cup firmly packed brown sugar
¼ cup (1/2 stick) butter, melted
2 tablespoons grated lemon peel
2 tablespoons fresh lemon juice
2 tablespoons bourbon
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
2 teaspoons vanilla
¼ cup chopped pecans (optional)
- 1.Preheat oven to 350°F. Place potatoes in large Dutch oven and cover with water. Bring to a boil. Reduce heat and simmer 20 minutes. Drain; let cool.
- 2.Peel and slice potatoes. Layer slices in 13x9-inch baking dish coated with nonstick cooking spray.
- 3.Combine sugar, butter, lemon peel, lemon juice, bourbon, cinnamon, nutmeg and vanilla in small bowl; stir well. Drizzle syrup over potatoes. Sprinkle with nuts, if desired.
- 4.Cover; bake 40 minutes or until tender. Spoon syrup over potatoes before serving.
