Korean Turkey Meatballs with Brown Rice and Gochujang Sauce

Ingredients

KOREAN TURKEY MEATBALLS

1 pound BUTTERBALL® Fresh Ground Turkey

1 egg

½ cup plain dry bread crumbs

½ cup milk

½ bunch green onions

2 cloves garlic, minced

½ cup kimchi, finely chopped

1 tablespoon ginger, minced

2 teaspoons salt

GOCHUJANG SAUCE

1 cup rice vinegar

1 cup packed brown sugar

½ cup soy sauce

2 teaspoons gochujang paste or sriracha sauce

2 teaspoons sesame oil

2 tablespoons tomato paste

1 tablespoon sesame seeds

BROWN RICE

1 cup uncooked brown basmati rice

2 cups water

Optional toppings: sliced green onions, kimchi and sesame seeds

Directions

  • 1.
    Preheat oven to 400˚F. Combine all meatball ingredients in large bowl; mix well. Shape into 1-inch balls and place on parchment-lined baking sheet. Bake 18 to 20 minutes.
  • 2.
    Combine all sauce ingredients in large saucepan; bring to gentle boil. Reduce heat slightly; cook 5 minutes. *Can be done day or two in advance. Meanwhile, prepare rice. Cook rice in 2 cups water about 30 minutes or until water is absorbed. Fluff.
  • 3.
    Place 1 cup cooked rice on each plate. Top with meatballs and sauce. Serve with additional green onions, kimchi and sesame seeds, if desired.
