Pepper-Glazed Turkey Breast Filets

Turkey filets are seasoned, cooked in a jalapeño pepper glaze and served on a bed of rice.

Ingredients

  • Non-stick cooking spray
  • 1/2 cup slivered almonds
  • 1 tsp. cumin
  • 1/2 tsp. garlic powder
  • 1 tbsp. vegetable oil
  • 1 package (1lb.) Butterball® Turkey Breast Filets
  • 3/4 cup jalapeno jelly
  • 1/2 cup orange juice
  • 2 tbsp. currants
  • 2 tbsp. Worcestershire sauce
  • 1 tsp. spicy brown mustard
  • 3 cups cooked long-grain white rice

Directions

  1. Spray large non-stick skillet with cooking spray. Heat on medium-high heat. Add almonds; cook and stir 2 to 3 minutes, or until golden brown. Remove from skillet; set aside.
  2. Mix cumin, garlic powder and pepper in small bowl until well blended. Sprinkle over both sides of each filet. Heat oil in same skillet on medium heat. Add filets. Cook 2 to 2-½ minutes per side, or until filets are no longer pink in centers.
  3. Combine jelly, orange juice, Worcestershire sauce, currants and mustard in small bowl. Spoon over filets in skillet. Continue cooking just until jelly mixture is heated through and filets are evenly glazed with the jelly mixture. Turn filets over once to evenly coat both sides with the glaze. Sprinkle with almonds. Filets should reach 165°F in the centers. Serve over the rice.
