Sausage, Egg and Cheese-Stuffed Biscuits

Ingredients

1 tablespoon unsalted butter

6 large eggs, beaten

1 tablespoon chopped fresh chives

¾ teaspoon kosher salt

¼ teaspoon black pepper

1 can (16.3 ounces) refrigerated buttermilk biscuits

cups (6 ounces) shredded smoked yellow Cheddar cheese, divided, plus additional for garnish

1 tablespoon unsalted butter, melted

Directions

  • 1.
    Preheat oven to 350°F. Line large rimmed baking sheet with parchment paper.
  • 2.
    Heat 1 tablespoon butter over medium heat. Add eggs, chives, salt and pepper; cook, stirring frequently, about 3 minutes or until eggs are just set but not dry.
  • 3.
    Roll biscuits into 5-inch circles on lightly floured surface. Place 2 tablespoons scrambled eggs, 1 sausage patty and 2 tablespoons cheese in center of each biscuit circle. Fold dough over filling to meet in center, pinching to seal; place pinched side down on prepared baking sheet. Brush with melted butter and sprinkle with remaining ½ cup cheese.
  • 4.
    Bake 20 to 25 minutes until golden brown. Garnish with additional cheese. Serve immediately.
