Spanish Rice and Turkey Sausage Casserole for Potluck

Ingredients

2 tablespoons butter

1 package Rice-a-Roni Spanish Rice mix

1 can (15 ounces) black beans, rinsed and drained

1 can (about 14 ounces) diced tomatoes

1 package (13 ounces) BUTTERBALL® Smoked Turkey Sausage, cut into 1/2-inch slices

2-¼ cups water

1 cup (4 ounces) shredded Cheddar cheese

Directions

    Preheat oven to 350°F.
  • 2.
    Melt butter in Dutch oven or large ovenproof skillet over medium heat on stovetop. Add rice; cook and stir until vermicelli is golden brown. Stir in seasoning mix, beans, tomatoes and sausage; mix well. Pour in water. Increase heat to high; bring to a simmer for 3 to 5 minutes.

    Carefully transfer to oven. Bake 30 minutes. Carefully stir rice mixture; sprinkle with cheese. Bake 5 minutes or until cheese is melted and rice is tender.
