Turkey Taco Salad

Main dish salad combines lettuce, black beans, corn, tomatoes, shredded cheese topped with Butterball Fresh Ground Turkey that has been simmered with taco seasoning. Toss with tortilla chips and salad dressing for a great meal!

Ingredients

  • 1 pounc Butterball® Fresh Ground Turkey
  • ½ cup chopped onion
  • 1 packet (1 ounce) taco seasoning
  • 1 large bunch romaine lettuce, shredded (12 cups)
  • 1 can (15 ounces) reduced-sodium black beans, rinsed and drained
  • 2 medium tomatoes, seeded and chopped
  • 1 can (8 ounces) white OR yellow kernel corn
  • 1-½ cups (6 ounces) shredded Cheddar cheese
  • 3 cups (6 ounces) coarsely crushed corn chips
  • 1 cup reduced-fat Catalina dressing

Directions

  • Cook turkey and onion in medium skillet on medium heat 6 to 8 minutes or until turkey is no longer pink; drain. Return turkey mixture to skillet. Stir in taco seasoning; add water according to package directions. Simmer as package directions.
  • Place lettuce in large salad bowl or on large platter. Top with layers of black beans, tomatoes and corn. Top with warm turkey mixture and cheese. Sprinkle with corn chips.
  • Drizzle with dressing. Gently toss and serve.
