Whipped Potatoes with Shredded Savoy Cabbage

Ingredients

pounds Yukon Gold potatoes, peeled and cut into quarters

tablespoons sea salt

1 pound shredded savoy cabbage

1 cup buttermilk,* warmed**If you don’t have buttermilk, substitute 1 tablespoon vinegar or lemon juice plus enough milk to equal 1 cup. Let stand 5 minutes.

6 tablespoons butter, softened

Directions

  • 1.
    Place potatoes in large saucepan with enough water to cover; stir in salt. Bring to a boil over medium-high heat. Reduce heat and simmer, uncovered, 15 to 20 minutes or until potatoes are tender when pierced with fork.
  • 2.
    Add cabbage; cook 2 minutes or until tender.
  • 3.
    Drain potatoes and cabbage; place in large bowl. Mash to chunky consistency. Add buttermilk and butter; mash to smooth consistency.
