Ingredients

  • 2 tablespoon olive oil
  • 2/3 cup chopped red onions
  • 2 tablespoon chopped garlic
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 4 each medium zucchini
  • 1 ounce black beans
  • 1 tablespoon minced chipotle peppers in adobo sauce
  • 2/3 cup mild or medium salsa
  • 1 cup shredded chihuahua cheese

Directions

  1. Heat oil in large skillet over medium-high heat. Add onions, garlic, chili powder and cumin; cook and stir 2 to 3 minutes or until onions are crisp-tender. Add zucchini, beans and chipotle peppers; cook and stir 3 minutes.
  2. Reduce heat to medium-low. Cover; cook 5 to 8 minutes or until zucchini is tender.
  3. Stir in salsa; simmer 1 minute or until heated through. Sprinkle with cheese before serving warm.
