Ingredients

  • 1 tablespoon vegetable oil
  • 1-½ pounds BUTTERBALL® Ground Turkey
  • 1 cup chopped yellow onion
  • ½ cup chopped green bell pepper
  • 1 tablespoon minced garlic
  • 4 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 package (14 ounces) BUTTERBALL® Smoked Turkey Dinner Sausage, chopped
  • 2 cans (about 15 ounces each) black beans, rinsed and drained
  • 2 cups chunky salsa
  • 1 can (about 14 ounces) diced tomatoes with mild green chiles, undrained
  • Optional toppings: chopped green onions, shredded Cheddar cheese

Directions

  1. Heat oil in stockpot over medium heat about 1 minute. Add ground turkey, onion, bell pepper and garlic. Cook and stir 7 to 8 minutes or until turkey is no longer pink. Stir in seasonings.
  2. Stir in turkey sausage, beans, salsa and tomatoes. Heat to boiling; reduce heat. Simmer, uncovered, 15 minutes.
  3. Add toppings as desired.
