Greek Turkey Meatballs with Lemony Orzo Recipe

Ingredients

  • MEATBALLS
  • 2 lbs Butterball Fresh All Natural* Ground Turkey
  • 1 cup Italian-seasoned dry breadcrumbs
  • ½ cup crumbled feta cheese (plus more for garnish)
  • 2 large eggs
  • ¼ cup whole milk
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional: chopped spinach or fresh herbs
  • LEMONY ORZO
  • 1 cup dry orzo
  • 2 cups chicken broth or water
  • 2–3 tablespoons lemon juice
  • Zest of 1 lemon
  • 1–2 tablespoons olive oil
  • Salt and pepper to taste
  • FOR SERVING
  • Pita bread
  • Optional: extra feta, fresh herbs, lemon wedges, kalamata olives and a jar of roasted red peppers, drained and chopped

Directions

  1. Preheat oven to 400°F. Line a baking sheet with parchment or lightly grease.
  2. In a large bowl, mix ground turkey, breadcrumbs, feta, eggs, milk, garlic, salt, and pepper (and spinach/herbs if using) until combined. Form into golf ball-sized meatballs and place on the baking sheet.
  3. Bake for 15 minutes, until browned and internal temperature  reaches at least 165°F.
  4. Meanwhile, cook orzo according to package instructions in broth or water. Drain if needed, then toss with lemon juice, lemon zest, olive oil, salt, and pepper.
  5. To serve or store: (1) Orzo Bowl: Spoon lemony orzo into bowls or containers and top with meatballs. Finish with extra feta or herbs, if desired. (2) Pita: Warm pita and serve alongside the meatballs for scooping, or stuff meatballs into the pita. Add a spoonful of orzo inside or serve it on the side. (3) Store for later: Store in microwave-safe storage containers. Cover and refrigerate until ready to serve. To reheat, microwave, uncovered, on high for 1 minute. Stir; microwave on high for about 1 minute or until heated through.
