Cajun Turkey Sandwich

¼ cup mayonnaise
1 teaspoon fresh lemon juice
1 teaspoon Creole seasoning
2 cups coleslaw mix without dressing
1 cup thinly sliced red cabbage
1 cup matchstick slices Granny Smith apple
2 tablespoons chopped fresh cilantro
8 slices BUTTERBALL® Original Turkey Bacon
1 pound (16 ounces) BUTTERBALL® Cajun Style Turkey Breast
8 slices rye bread, toasted
- 1.Whisk together mayonnaise, lemon juice and Creole seasoning in medium bowl. Stir in coleslaw mix, cabbage, apple and cilantro until coated. Chill until ready to serve.
- 2.Prepare turkey bacon according to package directions.
- 3.Divide coleslaw mixture evenly on 4 slices of bread. Top each with 2 pieces turkey bacon and 4 ounces turkey breast; top with remaining 4 slices bread. Serve immediately.
