Ingredients

  • 1-½ cups chopped fresh pineapple
  • 4 tablespoons diced red onion, divided
  • 1 tablespoon chopped green onion
  • 1 tablespoon chopped fresh mint
  • 1 teaspoon lime peel
  • 1 tablespoon fresh lime juice
  • 1 teaspoon honey
  • ¾ teaspoon salt, divided
  • 1 package (16 ounces) BUTTERBALL® Fresh All Natural* Ground Turkey (93% lean/7% fat) *All natural means minimally processed; no artificial ingredients.
  • 1-½ tablespoons Caribbean jerk seasoning
  • 1 tablespoon garlic paste
  • 1 tablespoon ginger paste
  • 1 teaspoon ground black pepper
  • 2 teaspoons olive oil
  • 2 heads Bibb lettuce
  • Lime wedges (optional)

Directions

  1. Combine pineapple, 1 tablespoon red onion, green onion, mint, lime peel and juice, honey and ¼ teaspoon salt in medium bowl. Let stand until ready to serve.
  2. Combine turkey, jerk seasoning, garlic paste, ginger paste, pepper and remaining ½ teaspoon salt in medium bowl. Let stand 5 minutes.
  3. Heat oil over medium-high heat in medium skillet. Add remaining 3 tablespoons red onion; cook 3 to 5 minutes. Add turkey mixture; cook, stirring occasionally, 8 to 10 minutes until turkey is browned and most of excess liquid has cooked out. Remove from heat.
  4. To serve, spoon turkey mixture into lettuce leaves. Top with pineapple mixture. Garnish with lime wedges.
