Jamaican Ground Turkey Lettuce Wraps

1-½ cups chopped fresh pineapple
4 tablespoons diced red onion, divided
1 tablespoon chopped green onion
1 tablespoon chopped fresh mint
1 teaspoon lime peel
1 tablespoon fresh lime juice
1 teaspoon honey
¾ teaspoon salt, divided
1 package (16 ounces) BUTTERBALL® Fresh All Natural* Ground Turkey (93% lean/7% fat) *All natural means minimally processed; no artificial ingredients.
1-½ tablespoons Caribbean jerk seasoning
1 tablespoon garlic paste
1 tablespoon ginger paste
1 teaspoon ground black pepper
2 teaspoons olive oil
2 heads Bibb lettuce
Lime wedges (optional)
- 1.Combine pineapple, 1 tablespoon red onion, green onion, mint, lime peel and juice, honey and ¼ teaspoon salt in medium bowl. Let stand until ready to serve.
- 2.Combine turkey, jerk seasoning, garlic paste, ginger paste, pepper and remaining ½ teaspoon salt in medium bowl. Let stand 5 minutes.
- 3.Heat oil over medium-high heat in medium skillet. Add remaining 3 tablespoons red onion; cook 3 to 5 minutes. Add turkey mixture; cook, stirring occasionally, 8 to 10 minutes until turkey is browned and most of excess liquid has cooked out. Remove from heat.
- 4.To serve, spoon turkey mixture into lettuce leaves. Top with pineapple mixture. Garnish with lime wedges.
