Ingredients

  • KOREAN TURKEY MEATBALLS
  • 1 pound BUTTERBALL® Fresh Ground Turkey
  • 1 egg
  • ½ cup plain dry bread crumbs
  • ½ cup milk
  • ½ bunch green onions
  • 2 cloves garlic, minced
  • ½ cup kimchi, finely chopped
  • 1 tablespoon ginger, minced
  • 2 teaspoons salt
  • GOCHUJANG SAUCE
  • 1 cup rice vinegar
  • 1 cup packed brown sugar
  • ½ cup soy sauce
  • 2 teaspoons gochujang paste or sriracha sauce
  • 2 teaspoons sesame oil
  • 2 tablespoons tomato paste
  • 1 tablespoon sesame seeds
  • BROWN RICE
  • 1 cup uncooked brown basmati rice
  • 2 cups water
  • Optional toppings: sliced green onions, kimchi and sesame seeds

Directions

  1. Preheat oven to 400˚F. Combine all meatball ingredients in large bowl; mix well. Shape into 1-inch balls and place on parchment-lined baking sheet. Bake 18 to 20 minutes.
  2. Combine all sauce ingredients in large saucepan; bring to gentle boil. Reduce heat slightly; cook 5 minutes. *Can be done day or two in advance. Meanwhile, prepare rice. Cook rice in 2 cups water about 30 minutes or until water is absorbed. Fluff.
  3. Place 1 cup cooked rice on each plate. Top with meatballs and sauce. Serve with additional green onions, kimchi and sesame seeds, if desired.
