Maple-Basted Roast Turkey with Cranberry Pan Gravy

Ingredients

  • TURKEY
  • 1 (12- to 16-pound) BUTTERBALL® Fresh or Frozen Whole Turkey, thawed if frozen
  • 8 fresh sage leaves
  • ¼ cup fresh lemon juice
  • 2/3 cup pure maple syrup
  • GRAVY
  • Pan drippings
  • 2½ cups chicken broth, divided
  • 2 cups cranberry juice cocktail
  • 2 tablespoons cornstarch
  • ¾ cup sweetened dried cranberries

Directions

  1. Preheat oven to 325°F. Remove neck and giblets from body and neck cavities of turkey. Refrigerate for another use or discard. Pat turkey dry with paper towels. Turn wings back to hold neck skin in place. Return legs to the tucked position, if untucked. Place turkey, breast side up, on flat rack in shallow roasting pan. Gently loosen skin over breast; tuck sage leaves under skin. Brush turkey with lemon juice.
  2. Roast turkey 1½ hours. Then, cover breast and top of drumsticks loosely with foil to prevent overcooking.
  3. Continue roasting turkey 1 hour. Uncover turkey and baste every 15 minutes with maple syrup during last 30 minutes of roasting. Continue roasting turkey 30 minutes to 1 hour* or until meat thermometer reaches 180°F when inserted into deepest part of thigh not touching bone.*Follow cooking times according to package directions; times vary with size of turkey.
  4. Transfer turkey to cutting board; loosely tent with foil. Let stand 15 minutes while preparing gravy.
  5. Place roasting pan with drippings on burners over medium heat. Stir in ½ cup broth; bring to a boil, scraping browned bits from bottom of pan. Remove roasting pan from heat; strain mixture through sieve into large saucepan.
  6. Add 1½ cups broth and cranberry juice cocktail. Bring to a boil over medium heat, stirring frequently; reduce heat to medium-low. Combine remaining ½ cup broth and cornstarch in small bowl; mix smooth. Stir cornstarch mixture into saucepan; add cranberries. Cook and stir 5 minutes or until gravy thickens. Serve with turkey.
