Ingredients

  • 3 tablespoons olive oil
  • 1 package (16 ounces) BUTTERBALL® Fresh Ground Turkey
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup onion, chopped
  • ½ cup green bell pepper, chopped
  • 1 can (about 14 ounces) diced tomatoes
  • 1 can (about 15 ounces) black beans, rinsed and drained
  • 1 cup corn
  • 1 package (1-1/4 ounces) taco seasoning mix
  • 2-½ cups water
  • 8 ounces elbow macaroni pasta, uncooked
  • 2 cups (8 ounces) shredded Mexican cheese blend

Directions

  1. Heat large skillet over medium heat.
  2. Add oil, turkey, salt, black pepper, onion and bell pepper. Cook about 7 to 10 minutes or until turkey is no longer pink.
  3. Add tomatoes, black beans, corn, taco seasoning and water.
  4. Bring to a full boil; add pasta.
  5. Reduce heat to low simmer; cook 8 minutes, stirring occasionally.
  6. Add cheese; stir until cheese is melted.
