Ingredients

  • 4 each BUTTERBALL® Original Seasoned Frozen Turkey Burgers
  • 1/4 cup mayonnaise
  • 1/4 cup sun-dried tomatoes packed in oil
  • 2 each portobello mushroom caps
  • 2 cup arugula or mixed spring greens
  • 2 tablespoon red wine vinaigrette
  • 4 each foccacia rolls
  • 8 each slices goat cheese

Directions

  1. Prepare turkey burgers according to package directions for grilling.
  2. Combine mayonnaise, sun-dried tomatoes and 2 tablespoons reserved oil; set aside.
  3. Grill mushroom caps 2 minutes on each side or until tender. Cut each into 6 wedges.
  4. Combine arugula and red wine vinaigrette.
  5. Spread cut sides of each roll with 1 tablespoon mayonnaise mixture. Place 1/3 cup arugula mixture on bottom half of roll. Cover with 3 pieces of mushroom. Top each with cooked turkey burger and 2 slices cheese; cover each with top of roll.
