Ingredients
- 4 each BUTTERBALL® Original Seasoned Frozen Turkey Burgers
- 1/4 cup mayonnaise
- 1/4 cup sun-dried tomatoes packed in oil
- 2 each portobello mushroom caps
- 2 cup arugula or mixed spring greens
- 2 tablespoon red wine vinaigrette
- 4 each foccacia rolls
- 8 each slices goat cheese
Directions
- Prepare turkey burgers according to package directions for grilling.
- Combine mayonnaise, sun-dried tomatoes and 2 tablespoons reserved oil; set aside.
- Grill mushroom caps 2 minutes on each side or until tender. Cut each into 6 wedges.
- Combine arugula and red wine vinaigrette.
- Spread cut sides of each roll with 1 tablespoon mayonnaise mixture. Place 1/3 cup arugula mixture on bottom half of roll. Cover with 3 pieces of mushroom. Top each with cooked turkey burger and 2 slices cheese; cover each with top of roll.
