Ingredients

  • ½ cup reduced fat balsamic vinaigrette dressing
  • 6 slices eggplant, each about ¾-inch thick
  • 2 red onions, sliced ½-inch thick
  • 2 zucchini, sliced lenghtwise ½-inch thick and then cut in half, total of 6 pieces
  • 2 tomatoes, sliced ½-inch thick
  • 1 package Butterball® Polska Kielbasa Turkey Dinner Sausage
  • 3 oz. crumbled feta cheese
  • 6 fresh basil leaves
  • ½ cup reduced fat red wine vinaigrette

Directions

  1. Combine balsamic vinaigrette and sliced vegetables in self-sealing plastic bag or glass dish. Marinate in refrigerator 30 minutes
  2. Preheat grill to medium.
  3. Grill sausage, eggplant, onions and zucchini 8 to 10 minutes, turning frequently until sausage reaches an internal temperature of 160°F and vegetables are tender. Add tomatoes during last 2 minutes of cooking, turning after 1 minute.
  4. Diagonally slice sausage. Divide sausage and vegetables evenly among 6 plates. Top with cheese and basil leaves. Drizzle with red wine vinaigrette.
