Sweet Potato Corn and Sausage Soup

1 link (1/2 (16-ounce) package BUTTERBALL® Everyday Smoked Turkey Dinner Sausage
2 cups beef broth
2 cups roasted sweet potato (about 2 large), skins removed
1 chipotle pepper in adobo sauce (optional)
2 ears cooked corn, kernels removed
Chopped fresh parsley (optional)
- 1.Cook sausage according to package directions; slice into medallions.
- 2.Combine broth, sweet potato and chipotle pepper, if desired, in medium saucepan over medium heat. Season with salt. Cook 10 minutes. Blend with immersion blender until desired consistency. (Or process in batches in food processor or blender.)
- 3.Add sausage and corn; cook 10 to 20 minutes, allowing flavors to blend. Divide among bowls; garnish with parsley.
