Ingredients
8 slices BUTTERBALL® Original Turkey Bacon
4 cups fresh baby spinach
2 cups freshly shredded Cheddar cheese
2 cups riced cauliflower
6 large eggs, beaten
¼ cup unsalted butter, melted
2 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon kosher salt
1 teaspoon ground black pepper
Directions
- 1.Cook bacon in large skillet over medium heat, turning occasionally, about 18 minutes or until crisp. Remove bacon; drain on paper towels. Let cool; crumble bacon.
- 2.Combine crumbled bacon, spinach, cheese, cauliflower, eggs, butter, onion powder, garlic powder, salt and pepper in large bowl.
- 3.Preheat waffle iron according to manufacturer’s directions; spray with nonstick cooking spray. Scoop ¾ cup waffle mixture onto waffle iron; cook 4 to 5 minutes or until golden brown. Repeat procedure with remaining waffle mixture.
