Ingredients

  • 1 pack Butterball All Natural Turkey Tenderloins
  • 1 teaspoon kosher salt
  • 2 teaspoons olive oil
  • 2 medium shallots, thinly sliced
  • 6 cloves garlic, finely chopped
  • 1 cup heavy cream
  • 1 teaspoon or 1 cube veggie or chicken bouillon
  • ¼ cup shredded Parmesan
  • ½ cup sun-dried tomatoes packed in oil, drained and chopped
  • 2 teaspoons Italian seasoning
  • ½ teaspoon crushed red pepper
  • 1 teaspoon freshly cracked black pepper
  • 1 cup spinach or arugula
  • ¼ cup fresh basil leaves
  • Cooked pasta of choice to serve

Directions

  1. Pat turkey tenderloins dry on all sides and season with salt. Add olive oil to a medium high-sided skillet and place over medium-high heat. Add tenderloins to preheated skillet and cook for 4-5 minutes on each side until lightly browned, but not all the way cooked through. Transfer turkey to a plate and set aside.

  2. Reduce heat to medium and add shallots and garlic to skillet. Cook until fragrant, 1-2 minutes, stirring occasionally.

  3. Add half a cup water to deglaze pan, scraping up any brown bits off the bottom. Stir in heavy cream, bouillon, Parmesan, sun-dried tomatoes, Italian seasoning, crushed red pepper, and black pepper.

  4. Return turkey tenderloins to skillet, nestling them into the sauce. Bring to a boil, then reduce heat to maintain a low simmer for 8-10 minutes, stirring occasionally, until sauce thickens slightly and the tenderloins’ internal temperature reaches 165°F on an instant-read thermometer.

  5. In the last 2 minutes of cooking, stir spinach or arugula into sauce.

  6. Sprinkle fresh basil over turkey and serve with pasta.
