Southwest Turkey Scramble
Ingredients
- 8 slices BUTTERBALL® Turkey Bacon and/or BUTTERBALL® Breakfast Sausage links
- ½ ripe avocado
- 4 large eggs
- 1 teaspoon milk
- ¼ cup (1 ounce) shredded cheddar cheese
- Salt and black pepper
- 1 teaspoon butter
- ½ diced red bell pepper
Directions
- Cook bacon according to package directions. When cool, chop half of the bacon; set aside. Chop avocado; set aside.
- Whisk together eggs, milk and cheddar, in small bowl. Season with salt and black pepper.
- Heat butter in large nonstick skillet, until just melted. Add bell pepper; cook 2 minutes or until crisp-tender. Add egg mixture; cook over medium-low heat, stirring consistently, until eggs are set. Remove from heat; stir in chopped bacon and avocado. Serve immediately with remaining slices of bacon and/or a few pieces of sausage.
