Ingredients

  • FOR THE SAUSAGE:
  • 1 package (13 oz) Butterball Hardwood Smoked Turkey Sausage, sliced into 1-inch rounds on the bias
  • FOR THE BOURBON OLD FASHIONED GLAZE:
  • 3 tablespoons bourbon
  • 2 tablespoons brown sugar
  • 1 tablespoon orange zest
  • 1 tablespoon orange juice, freshly squeezed
  • 5 peppercorns
  • 1 bay leaf
  • Pinch of kosher salt
  • FOR GARNISH:
  • Maraschino or Luxardo cherries
  • Fresh rosemary sprigs

Directions

  1. In a small saucepan over medium heat, combine all glaze ingredients. Stir and simmer for 3 to 4 minutes until sugar is dissolved and glaze is slightly thickened. Remove from heat and set aside.
  2. Preheat smoker to 225°F. Cherry or applewood chips work especially well here and complement the sausage's existing hardwood smoke flavor.
  3. Place sausage rounds directly on smoker grate. Smoke for 30 minutes to allow sausage to absorb extra smoke and heat through.
  4. Brush sausage generously with bourbon glaze. Smoke for another 15 to 20 minutes, brushing with glaze once more halfway through, until the glaze is caramelized and sticky.
  5. Remove from smoker and arrange on a serving platter. Garnish each piece with a cherry and small sprig of fresh rosemary.

Notes: Since the sausage is already fully cooked, you're really just building flavor and getting that glaze to set in the smoker. Don't rush the smoke time — that low-and-slow heat is what makes the glaze really stick and caramelize. The glaze can be made up to a day ahead and stored in the fridge.
