Ingredients
8 large eggs
¾ cup cottage cheese
¼ teaspoon kosher salt
¾ cup diced Butterball Turkey Breakfast Sausage Links or Patties
½ cup cheddar or Colby Jack cheese cubes
½ cup chopped quick-cooking veggies of choice, like broccoli, tomato, or spinach
Directions
Preheat oven to 350°F. Spray a 12-cup muffin tin with cooking spray.
Add eggs, cottage cheese, and salt to a food processor or blender and pulse just until smooth.
Divide diced turkey sausage, cheese, and veggies between muffin cups, then pour egg mixture evenly over each cup to fill three quarters of the way.
Bake 15-20 minutes, or until egg bites have puffed up slightly and are no longer wet on top. Let egg bites cool 5 minutes before enjoying.
Egg bites can be covered and stored in the refrigerator for 4-5 days, or they can be frozen for a quick microwavable breakfast throughout the week.
TIP: For an ultra-smooth sous vide-like texture, use a water bath to bake egg bites. To do this, heat 6-8 cups water until steaming. Place greased muffin tin inside a high-sided sheet tray or roasting pan. Fill muffin cups with egg mixture as directed, then transfer roasting pan to oven. Very carefully pour the hot water into the roasting pan so water comes about halfway up the sides of the muffin tin. Bake as directed.
