Turkey Sausage and Pasta Toss

10 ounces uncooked penne or gemelli pasta
2 tablespoons olive oil
½ of 13-ounce package BUTTERBALL® Smoked Turkey Dinner Sausage, cut into 1/4-inch-thick slices
2 cups fresh asparagus (1-inch pieces)
½ cup chopped onion
2 cups sliced yellow squash, quartered
1 can (about 14 ounces) no-salt-added diced tomatoes, drained
¼ cup prepared pesto
Grated Parmesan cheese (optional)
- 1.Cook pasta according to package directions, omitting salt. Reserve ¼ cup cooking liquid; set aside. Discard remaining cooking liquid.
- 2.Meanwhile, heat oil in large saucepan. Add sausage, asparagus and onion; cook 5 minutes. Add squash; cook 2 minutes. Add tomatoes, pesto and reserved cooking liquid; cook 1 to 2 minutes or until mixture is heated through.
- 3.Toss cooked pasta with tomato mixture; sprinkle with cheese, if desired.
