Fig Bacon and Blue Cheese Pizza

Ingredients

1 (12-inch) prepared pizza crust

2 tablespoons olive oil, divided

1 red onion, halved and thinly sliced

½ cup (2 ounces) shredded Monterey Jack cheese

3 tablespoons fig jam

4 slices BUTTERBALL® All-Natural Turkey Bacon, cut into pieces

cup sliced dried figs

½ cup crumbled gorgonzola cheese

2 tablespoons balsamic vinegar• •Or substitute 1 tablespoon prepared balsamic glaze and skip cooking the vinegar in step 3.

Directions

  • 1.
    Preheat oven to 450°F. Place pizza crust on baking sheet or pizza pan. Brush with 1 tablespoon oil.
  • 2.
    Heat remaining 1 tablespoon oil in large skillet over medium heat. Add onion; cook and stir 10 minutes or until soft and browned. Spread over pizza crust; sprinkle with Monterey Jack cheese. Dot with jam and top with bacon and figs. Sprinkle with gorgonzola cheese.
  • 3.
    Bake about 10 minutes or until crust is lightly browned and cheese is melted. Meanwhile, cook vinegar in small saucepan over medium heat until reduced to about 2 tablespoons, swirling pan occasionally. Drizzle over pizza. Cut into wedges or squares to serve. Garnish with arugula.
