Turkey Bacon and Kale Frittata

Nonstick cooking spray
1 small onion, chopped
4 slices BUTTERBALL® Lower Sodium Turkey Bacon, chopped
4 cups coarsely chopped kale leaves
2 cloves garlic, minced
2 cups EGG-BEATERS® cholesterol-free egg substitute
¼ teaspoon salt (optional)
¼ teaspoon black pepper
2-½ ounces crumbled goat cheese
- 1.Spray large ovenproof skillet with cooking spray. Heat over medium heat. Add onion and bacon; cook and stir 6 to 8 minutes or until onion is light golden.
- 2.Add kale and garlic; cook 3 to 5 minutes or until kale is wilted. Evenly spread mixture to cover bottom of skillet.
- 3.Whisk egg substitute, salt, if desired, and pepper in small bowl until well blended. Pour evenly over kale mixture; sprinkle evenly with cheese. Cover and cook 6 to 7 minutes or until almost set.
- 4.Preheat broiler. Uncover skillet; broil 2 to 3 minutes or until golden brown and set. Let stand 5 minutes before cutting into six wedges.
