Ingredients
1 large or 2 medium sweet potatoes (1-1/2 to 2 pounds), peeled and diced
1-½ to 2 cups water
½ cup sugar
¼ cup (1/2 stick) butter
¼ cup lowfat buttermilk
2 eggs
½ teaspoon vanilla
½ teaspoon cinnamon, plus additional for garnish
1 unbaked deep-dish pie crust
Whipped topping (optional)
Directions
- 1.Place potatoes in large saucepan; add water to cover. Bring to a boil; cook 15 to 20 minutes or until potatoes are fork-tender. Drain well.
- 2.Preheat oven to 375°F.
- 3.Beat sweet potatoes in large bowl with electric mixer at medium speed until smooth. Add sugar and butter; beat until well blended. Combine buttermilk, eggs, vanilla and ½ teaspoon cinnamon in small bowl; mix well. Add to sweet potato mixture; beat until well blended. Pour into unbaked crust.
- 4.Bake 1 hour or until center is set. Cool on wire rack. Garnish with whipped topping and additional cinnamon.
