Twice Baked Potatoes with Bacon and Avocado

2 russet potatoes
4 tablespoons shredded Cheddar cheese, divided
2 tablespoons sour cream
2 tablespoons milk
½ teaspoon salt
¼ teaspoon black pepper
2 slices BUTTERBALL® All-Natural Turkey Bacon, cooked, divided
½ avocado, thinly slliced
- 1.Preheat oven to 400°F.
- 2.Place potatoes on microwavable plate. Microwave on HIGH 10 to 12 minutes or until potatoes are fork-tender. Let stand until cool enough to handle.
- 3.Slice tops of potatoes; scoop insides into medium bowl leaving ¼-inch shells. Add 2 tablespoons cheese, sour cream, milk, salt and pepper; mix well. Mince one slice of bacon; fold into potato mixture. Spoon potato mixture back into potatoes. Top with remaining 2 tablespoons cheese. Place on baking sheet.
- 4.Bake 12 to 15 minutes or until potatoes are heated through and cheese is melted. Cut remaining slice of bacon into thick diagonal slices; place on top of potatoes. Garnish with avocado and salsa, if desired.
